The Best Blueberry Muffins Recipe (Bakery-Style, Tall and Moist)
By Trevor · Updated · 40 minutes total · 12 large muffins
In a nutshell
The best blueberry muffins start with a thick buttermilk batter made from 2 1/2 cups flour, 1 cup sugar, 2 eggs, melted butter and lemon zest, folded with 2 cups of flour-dusted blueberries. Fill the muffin cups to the very top, add a simple streusel, and bake at 425°F for 5 minutes, then 375°F for 17 to 20 minutes. The high initial heat makes the tall bakery domes.

These are the blueberry muffins you find in a good bakery case: tall, domed, crackly on top and soft and moist inside, with so many berries that every bite has one. They taste like butter and lemon and summer, and they are honestly not hard to make. The batter takes fifteen minutes and one bowl.
The trick to the tall tops is two-fold. The batter is thick, so it holds its shape in the pan, and the oven starts hot for the first five minutes, which forces the muffins to spring upward before the crust sets. After that the temperature comes down so the centers can bake through without the edges drying out.
I have baked these with fresh berries in July and frozen berries in January. Both work, and I will show you how to keep frozen berries from turning the batter purple.
Why this recipe works
- A thick, high-ratio batter filled to the very top of the cups produces tall, bakery-style domes.
- Baking at 425°F for the first 5 minutes creates a burst of steam and lift, then 375°F finishes the centers gently.
- Buttermilk and melted butter make the crumb moist and tender for days, not just the first hour.
- Tossing the berries in flour keeps them suspended in the batter instead of sinking to the bottom.
- Lemon zest brightens the blueberries without making the muffins taste like lemon.
Ingredient notes and substitutions
Fresh blueberries are ideal, but frozen wild blueberries are wonderful too and often cheaper. Do not thaw them. Toss them in the flour straight from the freezer and fold them in last, working quickly, and they will barely bleed.
Buttermilk gives the softest crumb. In a pinch, use 1 cup of milk with 1 tablespoon of lemon juice stirred in, or 3/4 cup plain yogurt thinned with 1/4 cup milk. Whole milk alone works but the muffins will be a touch less tender.
Melted butter gives the best flavor. If you prefer, use 1/2 cup neutral oil for a slightly more moist muffin that stays soft longer. The streusel needs cold butter, not melted.
The secret to tall muffin tops
Fill the cups all the way to the top. This feels wrong the first time, but it is what bakeries do. The thick batter will not spill over; it will rise straight up and spread into a wide, crackly cap. To make this work, either use paper liners that reach the top of the cup or grease the top surface of the muffin pan so the overflow does not stick.
Then bake hot, then lower. Preheat to 425°F, put the muffins in, and after exactly 5 minutes, without opening the door, turn the oven down to 375°F. The blast of high heat activates the baking powder quickly and pushes the muffins up before the tops set.
How to keep blueberries from sinking
Two things help. The batter is thick enough to hold the berries in place, and tossing them in a tablespoon of flour gives them a dry coat that grips the batter instead of sliding through it. Fold them in gently at the very end with as few strokes as possible.
Make-ahead and gift tips
These muffins freeze beautifully. Cool completely, wrap individually, and freeze for up to 3 months. Warm one in the microwave for 30 seconds or in a 350°F oven for 10 minutes and it tastes freshly baked. The batter can also be scooped into the pan, covered, and refrigerated overnight; add 2 or 3 minutes to the bake time.
How to store blueberry muffins
- Keep in an airtight container at room temperature for 3 days. Place a paper towel under and over the muffins to absorb moisture and keep the streusel crisp.
- Refrigerate for up to a week, though they are best at room temperature.
- Freeze individually wrapped for up to 3 months. Reheat from frozen in a 350°F oven for 10 minutes.
Variations to try
- Lemon blueberry: add 2 tablespoons lemon juice to the batter and drizzle cooled muffins with a glaze of 1 cup powdered sugar and 2 tablespoons lemon juice.
- Mixed berry: replace half the blueberries with raspberries or chopped strawberries.
- No streusel: skip the topping and sprinkle the batter with coarse sugar before baking for a crunchy, sparkly top.
- Whole wheat: replace 1 cup of the all-purpose flour with white whole wheat flour.
Frequently asked questions
- Can I use frozen blueberries in muffins?
- Yes, and you do not need to thaw them. Toss them in a tablespoon of flour straight from the freezer and fold them in at the very end. Bake for 2 to 3 extra minutes if needed.
- Why are my blueberry muffins dry?
- Overbaking and overmixing are the two usual causes. Pull the muffins as soon as a toothpick comes out mostly clean, and stir the batter only until the flour disappears. Measuring flour by spooning it into the cup rather than scooping also prevents accidentally adding too much.
- How do I get tall muffin tops like a bakery?
- Use a thick batter, fill the cups to the top, and start the oven at 425°F for the first 5 minutes before reducing it to 375°F. Those three things together produce the high domes.
- How do you keep blueberries from sinking to the bottom of muffins?
- Toss the berries in a tablespoon of flour before folding them into a thick batter. The flour helps them cling to the batter instead of sliding down.
- Can I make the batter the night before?
- Yes. Scoop the batter into the lined pan, cover tightly, and refrigerate overnight. Add the streusel just before baking and bake 2 to 3 minutes longer.
- How many calories are in a homemade blueberry muffin?
- One of these large muffins with streusel has about 330 calories. Skipping the streusel saves roughly 50 calories per muffin.

Equipment
- 12-cup muffin pan
- Paper liners
- Two mixing bowls
- Whisk and spatula
- Large cookie scoop (optional but helpful)
- Wire cooling rack
Instructions
Prepare the pan and oven
Preheat the oven to 425°F (220°C). Line a 12-cup muffin pan with paper liners and lightly grease the top surface of the pan so the muffin tops do not stick as they spread.
Make the streusel
In a small bowl, stir together the sugar, flour and cinnamon. Add the cold butter cubes and rub them in with your fingertips until the mixture looks like coarse, sandy crumbs with a few pea-sized pieces. Refrigerate while you make the batter.
Whisk the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
Whisk the wet ingredients
In a medium bowl, whisk the eggs, then whisk in the buttermilk, melted butter, vanilla and lemon zest until smooth.
Combine
Pour the wet ingredients into the dry ingredients and fold with a spatula just until no dry streaks remain. The batter will be thick and slightly lumpy. Do not overmix or the muffins will be tough.
Add the blueberries
Toss the blueberries with 1 tablespoon of flour in a small bowl, then fold them gently into the batter with just a few strokes.
Tip: If using frozen berries, keep them frozen until this moment and work quickly to limit bleeding.
Fill the cups
Divide the batter among the 12 cups, filling each one all the way to the top. A large ice cream scoop makes this easy. Sprinkle the streusel generously over each muffin, pressing lightly so it sticks.
Bake hot, then lower
Bake at 425°F for 5 minutes. Without opening the oven door, reduce the temperature to 375°F (190°C) and bake for another 17 to 20 minutes, until the tops are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
Cool
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. They are wonderful warm, but they slice more cleanly once cooled.
Notes
- Fill the cups all the way to the top for tall domes. The thick batter will not overflow.
- Do not open the oven when you lower the temperature; the heat drop happens on its own.
- For jumbo muffins, use a 6-cup jumbo pan and bake at 425°F for 5 minutes, then 375°F for 25 to 28 minutes.
